Read Chapter 5, Configuring Network Connections, in Using VMware Workstation and then use the Virtual Network Editor and disable DHCP on the target VMnet you choose to use. (Best to use other then the default VMnets.) You may also want to disable the Host's Adapter for that VMnet as well.
